Activity Summary

The manufacture of shrimp was carried out by planning in the regions of Indonesia, especially the coastal area where the source of raw materials in the form of shrimp, rebon, and abundant fish. Different manufacturing processes will certainly provide results that are not the same for each paste product, especially shrimp paste from different areas. This is due to the growth of microorganisms strongly influenced by the environment where it grows. To overcome this problem, Sith �Itb conducts research to standardize the manufacture of shrimp paste with the goal so that the produced shrimp paste has good quality and maintained in each production process. The survey and sampling was carried out in several cities in Indonesia, including Medan, Bangka, Lampung, Indramayu and Cirebon. Analysis of the content of shrimp paste and manufacturing optimization was carried out in the ITB Microbiology Laboratory. Terasi manufacturing standardization training was carried out for one day in one of the terrasi-producing areas in the Cirebon City area, precisely in the village of Cangkol. Furthermore, participants were given material and discussions about the various types of shrimp paste in Indonesia.
