Palm oil produces two different types of oil properties, namely oil Coming from the mesokarp (Mesokarp) and oil originating from seeds (kernel). Coarse palm oil (Crude Palm Oil, CPO) is a first-rate product that can provide added value of around 30% of the value of fresh fruit bunches. Separation of triglyceride fatty acids in palm oil can be done using the fractionation process. In general, the fractionation process of palm oil can produce 73% olein, 21% stearin, and 5% Palm Fatty Acid Distillate (PFAD). Stearin palm is a solid fraction produced from the fractionation process of palm oil after going through purification. The Stearin Faction MSM has a highly high carotene content. Stearin from palm oil has the potential as a raw material for margarine. Margarine is an emulsion product with the type of water emulsion in oil made from oil and food fat. The utilization of these side results can be used as raw material for making margarine that is rich in carotten. The common margarine is on the market so far it is processed from palm oil and palm core oil which has experienced the stages of the bleaching permeated process that removes many minor components, especially carotenoids. This is very unfortunate because it eliminates the benefits of carotenoids which are quite large in palm oil. Therefore, research is needed on making margarine whose raw material is stearin which still contains high carotenoids but still meets the standards to become food and guaranteed security. In addition, the fortification of margarine will be carried out with various micronutrients (vitamins, minerals) to overcome various problems in children (growth and development) and parents (degenerative diseases).
