Food additives are widely used included in commercial bread for several reasons. Some substances may require certain regulations even prohibited because it is possible to endanger human health. Potasium Bromat is one of the bread processors that has been excluded from the list of additional materials permitted by the Ministry of Health of the Republic of Indonesia. But public awareness about potassium bromat is still limited. Bread is often consumed by everyday society especially for children. The effects of addipping foods that are prohibited can accumulate and cause serious health problems such as cancer. Therefore, education needs to be carried out to the public about food additives that are prohibited. For stage 1, as many as 300 respondents consisting of pharmaceutical students of undergraduate programs and pharmacist professions at the Bandung Institute of Pharmacy School (ITB), non-pharmaceutical students, and community populations were identified using a structured questionnaire. The age of respondents is in the age range of 16-41 years. The previous questionnaire was clarified and validated through selected respondents. Data analyzed statistically and the relationship between groups and other parameters was carried out by the Chi-Square test. The results showed that SF ITB students had the highest level of knowledge of the additional food ingredients (61%), followed by the community population (54%) and other non-pharmaceutical students (40%). Pharmaceutical students also have a higher level of awareness about potassium bromat (16%) and their functions (15%) compared to other groups (10%). Based on this study, the background in the pharmaceutical sector is thought to affect the level of knowledge of food additives. In addition, it is recommended to increase educational related to food additives, especially potassium bromat on bread to the wider community.
